Today Pegs and I woke up and had the most stimulating and enriching conversation before getting out of bed… “Church in bed” as we like to call it! After our little “mass,” we did another relaxing yoga set right in the living room and then made french toast, before going on a bike ride.
We rode our bikes through Steamboat’s botanical gardens, which has to be one of the most beautiful ones I have seen! Majority of the flowers were still in bloom and the bees were having a field day. After taking some photos, we continued on the bike path.
After about another mile or so, we headed back home to beat the rain and get to work on the cookbook. Since Kathy was making dinner for us tonight we had plenty of time! We spent a good 3 hours creating the Table of Contents of the cookbook, and deciding exactly what recipes were going to be inside.
At 6 o’clock we headed over to Kathy’s for a delicious Niçoise salad she had made with basically every ingredient from her very own garden! It was truly delectable!! After getting satisfyingly full, we showed Kathy our progress with the book in search of feedback. Just when we thought it was over, for dessert, Kathy also had made homemade chocolate almond milk ice cream with toasted pecans and coconut on top! Again, an outrageously good eats :) We then lounged in our food comas, before Pegs and I headed home for bed… another one of our Monday workouts ahead!
