The past 15+ years of my life have all revolved around food, not necessarily by choice. While “being a bun in mother’s oven”, I inherited a gene causing my body to be intolerant to gluten. I found out this genetic information only 5 years ago, which had lead to many misguided doctor appointments and dead ends. Thankfully the magnificent woman who birthed me was willing to look outside the western medical community for answers. What we found on our journey to enlightenment was my nutritional well-being.
For many years doctors perceived a variety of food allergens that potentially could have caused my chronic illnesses, yet we were not seeing any improvements. As a child, I would go for weeks on end eliminating sugar, corn, dairy, wheat, -anything a normal child would crave from- my diet. This was the beginning of my love-hate relationship with food. Like all relationships, our diet requires work; work many people tend to neglect. Without food we could not survive, obviously. What many people are starting to realize is the importance in the types of food we choose to nourish our body. However, many of those people don't know just WHAT those types or kinds of foods are. Due to my extensive experience with foods that are not only beneficial for your body, but also tasty (thank you mama!) I have decided to share my life experiences about making life delicious gluten free.
Now this isn't your typical food/recipe blog. It just happens to be the most prominent component in my life right now. I have been doing a lot of cooking and really trying to switch up my meals since I tend to get stuck in routines of what I eat and when. Having recently graduated from the University of Colorado in Boulder, it is time to start embracing changes and I intend on making this as delicious & easy as possible :)
With change comes new beginnings, and my mother, Peggy, and I have just relocated from our hometown of Manhattan Beach, California to work on a cooking project in Steamboat Springs, Colorado. Moving from our wonderful beach community to another located in the mountains is something my mother has wanted to do with our family for years (I am the second eldest of four daughters). Now with my newly acquired free time since moving back home and deep appreciation for the mountains after four years in Boulder, fate was on our sides in bringing us here!
