We did our strength & stretching class again (MWF’s—Peg’s my personal trainer now), this time with a different instructor and I have come to another possible conclusion about this class: It is either something about these instructors and their personal needs to get in an extra hard work-out, (this was an equally challenging class with zero pity) OR it is actually these elder students who are enjoying the challenge by getting their butts kicked... Either way, it doesn't matter to me; I love the class!
Afterward, Pegs and I soaked in the natural hot springs before getting down to business... Which I must admit, I am going to need a serious reality check when I am unable to soak like this back in Manhattan Beach.
However, before going home and picking up the small table we had found for our printer yesterday, mom decided to go by one more consignment store on the other side of town, just to “make sure” it was just right. While shopping at Moxi, we found the final piece of furniture that belonged right next to Peg's bed; it was the perfect olive- colored whitewashed nightstand. We then drove back to Annie's to pick up the printer table, and also found the shoe bench that Dad had requested! What a day!
When we got home mom made the most delicious egg scramble with the leftover stir fry veggies for brunch before really got started working. We spent the rest of the afternoon setting up the contents for the cookbook. And looking over all the material Pegs already had, it is amazing how many recipes she has created… she easily has enough for numerous books ;) ;)
When we felt we had accomplished enough for the day, I found a new side of me I never knew existed: a handy-woMan! Not only did I set up the printer all by myself, I took off the back of our printer table to make it more functional AND hung a mirror on the wall; both of which required a hammer!
While I was being domestic, Pegs started prepping dinner for our friend Kathy and us. We made roasted zucchini and cauliflower quinoa and rice pilaf that we stuffed into butternut and adorn winter squash. Very yummy! Kathy came over with a salad that she had grown from her backyard garden with a delicious dressing she made! Before we sat down for dinner, our neighbor Amanda came by in need of some motherly loving from Pegs and invited us to see a rock-folk band, “Missed the Boat”, who were playing at the Ghost Ranch Saloon downtown. Kathy was tired and said she was going to sleep after dinner, but Pegs was determined to have some fun…
After we ate and said goodbye to Kathy, Pegs convinced me we needed to go listen to this Grammy nominated band. Although I was tired, I laughed at the fact that my mom was the one who was doing the convincing and realized we needed to go. We got there right as they started their first set and ended up staying until their set-break just before midnight. After tonight, I can now say I officially love folk!!
