Day 7, ALREADY:
I am continuously amazed at how fast the days go by here. It has already been one week and it feels like we just arrived!
Today we decided to ride our bikes to our Monday gym routine since it was a clear morning. Afterward, we headed home for Peg’s conference call with her non-profit organization GrowingGreat. While she prepared for her meeting I made us breakfast and began to fully update this blog. (And let me tell you, this is a lot more work than I anticipated, but completely worth it!!:)
When Pegs finished, we spent the afternoon collecting and organizing all the recipes we want to have in the Growing Great Families cookbook. The notebook we’ve created houses all the contents of what the cookbook will look like… VERY EXCITING!
For dinner, we made an altered version of eggplant parmesan/a somewhat baked ratatouille with Swiss chard. It ended up being a deliciously tasty combination!
After we ate, we called our friend Robin to see if she would be home for our post-meal stroll. All the boys, Todd Thomas & Chris, were there with a friend and we ended up chatting for a bit. It was nice to be in a house full of family again.
For already being here one week, I would say we have made great progress with the cookbook. Pegs and I have found a good rhythm working together, and compliment each other nicely.
