Meg's favorite Scramble


Ingredients:
-4 Eggs (Or as shown below; 2 regular eggs & 1 turkey egg)
-1/4 to 1/2 a Red Onion (depending how much you like red onion; i love it!)
-2 cloves of Garlic
-7 large leaves of Swiss chard
-2 cups of Spinach
-1 TBSP of Ghee (Butter or Olive Oil)
-A pinch of Celtic Sea Salt
-A pinch of Pepper

Begin by prepping your ingredients. Dice both your desired amount of red onion and the garlix. Next, clean then rough-chop the Swiss chard and ready your Spinach (although this may seem like a lot of greens, they cook down half their size). After prep-work, heat Ghee in a skillet to medium. Then scramble your Eggs in a bowl and season with Salt and Pepper.Once skillet is hot, add Onion and Garlic to the pan and cook until lightly browned (as shown above). Once ready, add your greens and cook until wilted.When greens are ready, pour in scrambled eggs (as shown above). Scramble eggs until fluffy or desired texture, AND THEN ENJOY!! :) **serves 2-3 friends**
