Nesting



Day 2 Getting Settled:

Our neighbors, Betsy and her husband Herb, who made mom’s wooden benches, woke us up early today for some business and ended up staying for a cup of tea. It is so funny to me how even here in Steamboat my mom has neighborhood friends who stop by to chat. After they left, we went to the Old Town club and did the most intense strength & stretching class; Pegs had warned me there was one teacher that was more difficult than the other and with our luck we got her our first day. I was easily the youngest person there by at least 20yrs… Even before the class began an older woman came up to tell us about how this very instructor last week caused her to ice her body because she was so sore. I was thoroughly entertained not only with the difficulty of the class, but also watching the instructor have these 60-70+yr old men and women doing weight lifts that were hard for me at a young & fit age of 22! If there was one thing I have learned after taking this class, is that all instructors should pay better attention to the feedback their students are giving about the class and not worrying about their own personal workout… I mean, hello, you are the teacher!!

After our workout we went into the clubs natural hot-springs and soaked before going home to make brunch. We ended up making the most delicious scrambled eggs with yellow onions, garlic, swiss chard, spinach and a side of whole wheat toast with (our fave) avocado! When we finished eating, Kathy came by with her daughter Kelly, who I have known since we were one, and spent time catching up.

The rest of the day we finished unpacking the last bit of the house. I always forget how tiring packing/unpacking is until I am doing it... So for dinner we added spinach to the leftover lentil soup with our favorite gluten free, soy free, & vegan Sunshine Burger patties on an arugula salad. We took a nice post-dinner stroll & concluded that tomorrow we would begin our project!
