Leftovers!!

Whoever said leftovers can't be good?? Not me!!
Tonight for dinner we has a Smörgåsbord with leftovers :) Our main course consisted of our meal from last night... We took the sautéd Bell Peppers, Chicken for Pegs, Onions and Summer squash hash and put it cold on top of a mixed greens salad! We then added some Avocado, Feta, Red onion, Heirloom Tomato, and toasted Pumpkin Seeds. Delish!!For Dessert, we used the leftover Butternut squash and Sweet potato from a few nights back and turned them into a baked custard! We mashed up the leftover orange goodies we had, then added:-1 Cup of coconut milk (almond or regular would work too!)
-2 Eggs
-1 TBSP vanilla extract
-2 TBSP cinnamonWe then baked them in the oven @ 350° for 30 minutes to fluffy perfection! The trick to baking custard apparently, is to place the dishes on top of 1/4 inch of water. After we left them cool down, we sprinkled some baked coconut shavings and Agave honey on top for the perfect (sugarless) dessert creation!
