After a long weekend away, Pegs & I are back in (Steam)’Boat! For Pegs, it was a nice long weekend in Manhattan Beach for GrowingGreat meetings, events, and family time. As for me, it was a nice long weekend filled with many beloved college antics; including celebrations as CU defeated the CSU Rams 28-14! Yaa Buffs!!
Most will say it is never fun having to go back to work, but Pegs & I were both ecstatic to get back to work in our beautiful mountain oasis!
After one last hike through Chautauqua and saying my goodbyes, I picked up Pegs from DIA and off we were. It was late by the time we got home, so we unpacked our things and went to bed early.
Tuesday began with our routine morning Yoga in the living room. For breakfast we ate the delicious “Granola Monster” that Alex (my older sister) made and sent back with Pegs! We then got crackin’ on the book... Pegs typed away, continuing to edit as I read through what she had already written. After we worked for a couple hours, Kathy came by to take us on an afternoon walk. We were only able to go for a short while because Kathy had to get back to work, so Pegs & I decided to continue enjoying the sun by biking along the Yampa.
When we got back to the house I made stir-fry with tempha and mung bean noodles! I started by chopping all the veggies (mushrooms, broccoli, and onions) before I sautéed them in a skillet. I then added the noodles and the tempha with a cup or two of veggie broth. It was a delicious meal if I do say so myself!! : )
I then left Pegs at home alone to meet up with some locals my own age for “Wing” night at the Tap House. It was a nice time before I headed home to save Pegs from herself.
Wednesday:
Today we woke up early for our club fitness regime. After our class, Pegs & I headed home to get to work. I made us brunch with our leftover stir-fry and poached eggs (idea taken from Alex’s last week) while Pegs was taken step by step through the process of purchasing a web-domain from the most patient GoDaddy phone-representative, Roxanne.
It was a successful day for the book, which you can check out for yourself at growinggreatcookbook.com (its nothing big… but you got to start somewhere!)!!
I then proceed to make a modified version of Peg’s Hill Street Granola as she got some groceries for dinner. It was a huge success, except for the fact that Pegs was not as thrilled with my purposely burnt results as I was… We can’t win ‘em all!
For dinner we made curry-spiced rice with onions and shitakes and roasted up the rest of vegetables we had from the previous week- eggplant, zucchini, summer squashes, and beets. It was another scrumptious dinner!
